BID Vendors. At the west end of the Market, members of the Collingswood Business Improvement District (BID) may sell food products not necessarily locally-sourced.
Shoppers may not know that the special arrangement with Sara’s Produce is that they may sell “exotic” produce, but are prohibited from selling anything that grows in New Jersey.

We’re fully booked this week, so BID is full too: Dulce Artisanal Pastry, Villa Barone, Cheese Etc, Charlie’s Crepes, and Sara’s Produce will take their usual spaces. And they’ll be joined by Inspired Brews Kombucha in what is becoming their usual space as well.

Susan Mauer Lynch (Yellow Room Upstairs). Smoked Pulled Pork. Susan and her family are clearly practiced carnivores. This week she selected and her husband slow-smoked a pastured and grass-fed Boneless Boston Butt from Hillacres Pride on their backyard smoking grill with hickory chips. Whether that works for you, or if you prefer variations for your conventional indoor oven or slow cooker, Susan offers recipes and cooking instructions for all three methods. Acorn Squash Mac & Cheese.
Stef Perna is on an acorn squash kick this month! She says, “Collingswood Farmers’ Market vendor, Savoie Organic Farm grows the sweetest tasting acorn squash. The natural sweetness inspired me to substitute homemade acorn squash puree for ‘canned pumpkin’ in cheesy pumpkin pasta recipe” featuring toasted hazelnuts. Seasons Change, Vendors Change
Last Chance this season for A.T. Buzby
SEASONAL CHANGES START NOW. Every year toward the end of September, crops cycle out and crops cycle in. As the corn and tomatoes fade, we’ll see more squash and late season greens, local broccoli and cauliflower, among other wonders of the autumn. This week we bid farewell (until next year) to our legacy vendors A.T. Buzby farm, our always reliable source of sweet corn and cantaloupe, to name just two of their specialties. Stop by the Buzby table this Saturday to wish them well.
Small Bills and a Bathroom Key
Many of you know, but for those of you who don’t, I carry small bills for vendors who run out of singles during the Market day. For guest vendors who might not be aware, I also have a key to Perkins Art Center, a Market sponsor, the primary benefit of which, for our vendors is INDOOR PLUMBING!
VENDOR PARKING PERMITS
It’s good business to save the best parking spaces for SHOPPERS! Most visitors will tell you it’s tough to find parking at the Market. We make things worse by parking our own vehicles in spaces that could be used and re-used many times by shoppers. Please encourage your table crew to park for free in the Lumberyard Parking Garage (just across Collings Avenue from the west entrance). There are plenty of spaces inside, and the walk back to the Market takes 3 minutes.

We have a couple of spaces to spare because of the unexpected absence this week of Sikking Flowers. We may get late additions (Extraordinary Ed or Preservation), but for now, the spaces are open and marked as Market Space. Otherwise, all spaces are accounted for. The Dog Tent will be staffed; we have a Featured Artist, and several Guest Vendors will join the roster this week, including a brand new vendor, Indogrow, a very small vertical farm that grows only the tiniest and most flavorful of microgreens.

Gina Horlacher of Cheese Etc says, “Be sure to stop for some homemade cheese spreads. Come early so you don’t miss out on 2 of our most popular: Fig ’N Zola (gorgonzola blended with figs, fig jam and a balsamic reduction), and the self-explanatory Blueberry Goat.
CHARLEY’S CREPES. This week, Charley features fresh produce from many vendors. “We’ll have an Eckert corn hash, Davidson sherry shallot mushrooms, Viereck roasted tomatoes and spinach, and Schober peaches and apples. This is the last chance for peach-filled crepes as we transition into pumpkin and cranberry season.” Yum.

New Vendor: Indogrow Microgreens
MICROGREENS! Patrick Gigliotti and Louis Monte grow microgreens in a very small vertical farm (see below) in Cherry Hill. Their delicate-looking products pack an amazing flavor punch into the smallest of packages (and about a pound’s worth of nutrition for every ounce). The tiniest samples are instantly recognizable as “spicy brown mustard,” or “fresh spring pea,” or “red beets,” to name just three examples. They’re new; they’re creating a buzz with bloggers; they’re featured in local restaurants, and they’re terrifically nice guys. Stop by and meet them at “the Perkins end of the Market.”

Follow Susan’s instructions for the special handling of this wonderful meat from Buck Wild Bison. Her carrots came from Our Yards Farm, her onions from A.T. Buzby, her celery from Flaim (and Formisano), her mushrooms from Davidsons, her delicata squash from Flaim, and her green beans from Springdale. This week Stef found treats from Savoie Organic, DanLynn Organic, Schobers & Sons, Fruitwood, Flaim, Viereck, and Springdale and shot gorgeous photos of them all. WEST STAGE BELOW PATCO. The New Valentines. They delighted us in June when they made their Market debut, and Matt and Genevieve LaPalomento are certain to delight us again with their beautiful harmonies and popular playlist. ‘Cause, once you’re delightful, you don’t stop being delightful.

We’re packed in tight again. Chocolate from John & Kira’s will fit in between Duker T’s Catering and Davidson’s Mushrooms. Kombucha will slide into a BID slot. We’ll have both Weckerly’s Ice Cream and Green Aisle Grocery near DanLynn Organic. Chloe’s Creme Puffs is back near Revolution Roasters. The Constellation Collective is in the Market. Goats in their petting pen take a space near the Music Tent, and we have two nonprofits filling out the roster. Look for representatives of the Book Fair wandering the market handing out flyers (the event is in October). No Dog Tent this week (our rescue had to cancel).

Susan has a knack for familiarizing the unfamiliar. This week she chose two items you might be hesitant to try and transforms them into a beautiful dish you’ll find completely comforting if still a bit new. With a fresh kohlrabi from Our Yards Farm and a gorgeous striped delicata from Flaim Farms, fried them in sequence with a fresh green onion, and created Hash Browns that will remind you of the potato version but contain nary a spud. CRISPY SALMON TOMATO AND CAPERS
Not exactly the popular delicatessen favorite, but you can see how an entrée that features salmon, onion, tomato and capers might have taken its inspiration from a bagel breakfast. Springdale Farms provided Sarah her hyper-local, super-fresh grape tomatoes. The yellow style add a fun punch, and a warm sweetness not found in the red type, making this dish a true celebration of the local produce. THE VETERANS GROUP. Yes, that’s a classic Stingray. And yes, you could own it for a raffle ticket. The Veterans Group will be at the Market on Saturday with tickets, but first, a word about what they do. They house homeless US Veterans at a cost of $29 a day ($848 a month). They provide group psychological and PTSD counseling. They partner with universities to provide quality education. They provide job search assistance including resume building and basic computer skills training. But, about that car? You could win it with one $20 ticket. Drawing November 11. We’re back to our usual procedures this week. Thank you for your patience during last week’s vacation break for yours truly. We have some notable absences this week as Charlie’s Crepes and Cheese Etc take their vacations, and Garden State Juice is done for the season. Both Big Shrimp and Neil’s Sharpening Service will have to make do with a crowded Guest Vendor area at the east end, where Nature’s Own Farm and Our Yards farm will also be back, and all sharing space with the wonderful goats of Knowhere Farm in their petting area. Lots of goodness but no extra space.

You may know Charles and Lisa Ciaccarelli Koory (Charley’s Crepes) are fully committed to incorporating fresh local ingredients from our very own vendors into the fillings for their fabulous crepes. He uses Davidson’s Mushrooms, Schober’s Peaches, and Bison from Buck Wild Bison, among others. This week, Charlie is buying fresh-never-frozen locally-farmed shrimp from The Big Shrimp Company (at the east end of the Market this week) to add a Shrimp Etouffee Crepe to his menu. Lines will be long. Don’t miss out!

The layout is a little odd this week. Because Haddon Avenue will be closed Saturday and Sunday for the Fine Arts and Crafts Festival, the Borough needs to route vehicle traffic along Irvin Avenue (at the Perkins Art Center end of the Market). Those traffic lanes cost us our usual Guest Vendor area, so we have to “suck it in” a bit. We’ll relocate some vendors to the “Treehouse spaces.” Others will find their spots in unexpected places.

As we have for a couple of seasons now, we’re taking advantage this week of the Treehouse Cafe’s annual August vacation to host 6 local animal rescues and shelters for the Annual Animal Adoptathon. They’ve taken over a bit of the BID area, bouncing Charlie’s Crepes to an open space usually occupied by Hillacres Pride. We’ll set up some chairs there to accommodate crepe and coffee customers.
NEW VENDOR: The Big Shrimp Company
FARM RAISED SHRIMP. Here’s a riddle. How are shrimp that are grown live in Pennsauken raised “in the waters of the Atlantic Ocean”?
ANSWER: The Big Shrimp Company brings ocean water to Camden County from Barnegat NJ in tanker trucks, then filters, heats, and hydrates it, and pumps it through their 75,000 gallon storage/growth tanks, constantly circulating it for additional filtration, and grows these Pacific White Shrimp with no chemicals, no antibiotics. Get yourself a taste this week. They’ve signed on for the rest of the season.

As forecasts go (especially this summer!) this week’s is not too bad. The Market-hour conditions are mostly cloudy with temps in the 70s, but the likelihood of rain overnight is pretty significant. That means the chalk will wash away before you arrive, so look for the green paint markings on the pavement and KNOW YOUR LOCATION NUMBER (or letter) when you arrive, please. NEW VENDOR: The Big Shrimp Company
FARM RAISED SHRIMP. Here’s a riddle. How are shrimp that are grown live in Pennsauken raised “in the waters of the Atlantic Ocean”?
ANSWER: The Big Shrimp Company brings ocean water to Camden County from Barnegat NJ in tanker trucks, then filters, heats, and hydrates it, and pumps it through their 75,000 gallon storage/growth tanks, constantly circulating it for additional filtration, and grows these Pacific White Shrimp with no chemicals, no antibiotics. Get yourself a taste this week. They’ve signed on for the rest of the season.

We’re full again with legacy vendors, plenty of guests, music on two stages, a guest artist, an animal rescue in the Dog Tent, and a yoga group. We relocated the new goat petting area to the usual Sikking Flower spaces below the Speedline. Be sure to see them; they’re adorable. Busy busy time of the season!
KNIFE SHARPENING. Consider bringing your knifes, tools, dull blades of all kinds to the Music Tent area this week. Neil comes to the Market only once a month, and SAT JUL 29 will be his last visit until the end of September.

Mike Wilk Lamb Farm.
Last year, he was a new vendor who gave many of us our first chance to buy fresh lamb directly from the farm that raised it. This year, we’ve been waiting with varying degrees of patience for the lamb to return. This is the week. Mike says, “We raise grass-fed lamb naturally. We use no hormones, fertilizers or other chemical additives. We rotate our flock every three days on fresh pasture and in the winter feed them exclusively hay with a little grain. Our lamb is sold directly to consumers, off the farm.” Thanks, Mike, and welcome back.

WEST STAGE BELOW PATCO. Guitarist, hippie, and jive turkey Barry Hollander will return to our west stage for a long-awaited encore since his first appearance at the Market in June. Don’t miss this one. He gets only three chances a season to make his mark.

Once again we have a very full site plan with no empty spaces. There’s little room for Guest Vendors, but we’ve carved out spots for a Kids Activity from Extraordinary Ed, a new goat petting pen from Knowhere Farm, and a henna tattoo station featuring the very talented Varsha Patel. Pick up a free seed packet from True North Church, or stop by to see the whimsical but very functional Scribble Stix of Featured Artist Bruce Palese. Live music from Trio Nova Duo and, making their Market debut, The Lonesome Turnpike Ramblers. Busy busy Market!

Berries are plentiful.
You’ll also see stone fruits like plums, peaches and nectarines. Beets, broccoli, cucumbers, eggplants, lima beans and cabbages are at the Market, too! Corn and tomatoes are still going strong.
Fruitwood Farm will have beets, blackberries, blueberries, cantaloupes, sweet cherries, white corn, cucumbers, eggplant, white and yellow peaches, donut peaches, Yukon gold potatoes, radishes, squash, string beans, tomatoes and honey.
Buzby Farms is bringing watermelon, cantaloupe, sweet corn, tomatoes, and more.
Viereck Farms reports they’ll have heirloom tomatoes, Cherokee purples, Brandywines, plus a lot of mixed cherry tomatoes.
Hillacres Pride is featuring chorizo sausage and our sage griller sausage at a special price of only $7/lb. We will also have our sliced nitrate free sweet bologna on special – try a sample! “Don’t forget to try our cheese samples each week and let us know your favorite!”

Susan Mauer Lynch Does Dinner and we’re invited.
Susan Mauer Lynch (Yellow Room Upstairs). Susan produces entire meals from the Market and provides careful, simple, logical instructions for preparing fresh ingredients. This week’s blog post includes several short tutorials any home cook will find helpful.
How to Grill Steak. Susan chose the Tomahawk Steak from Buck Wild Bison, our new meat vendor. It’s “lower in fat and cholesterol than choice beef, chicken, pork, and salmon” and is the new dinner choice for Susan’s family. Cook it “low and slow,” followed by a quick sear.
How to Caramelize Onions. Get fresh spring onions at several Market vendors including Flaim and Formisano, and make extra to save for later. Stir frequently over low, slow heat in butter and olive oil. Kosher salt, balsamic vinegar.
How to Fry Fresh Mushrooms. Get your fresh mushrooms from Davidson’s Exotic Mushrooms (any of six varieties) and fry them “the Julia Child way.” It involves letting the “butter bubble up and then bubble down” before adding the mushrooms. (You’ve probably been doing it wrong, like me.) Click through to the blog for the details.
Eggplant and Zucchini. As if that weren’t enough, you’ll find simple help for roasting Sicilian eggplant (from AT Buzby) and zucchini (from Springdale Farm). It helps to choose the right eggplant for different preparations. This one needs no salting.
