Amber Grain Bakery has joined Sara’s Produce, Villa Barone Restaurant, and the new Revelation Cafe (a combination effort between Revolution Roasters and The Constellation Collective).
THE MEAT MARKET: At the “other end” of the plan—the east end at Perkins Art Center—we’ve collected farms that raise livestock, including heritage beef and pork, yak and alpacas, chickens for their meat and eggs, pasture-raised lamb, and bison.

REVELATION CAFÉ! Local food heroes Revolution Roasters and the Constellation Collective have teamed up to form a new food-and-beverage café at the west end of the Market. Pull up a chair in their seating area and enjoy locally-roasted coffee and breakfast treats from the Garden State Culinary Arts “Rising Star Chef” Valentina Fortuna.

Stephen and Franziska (Franzi) Kramer, opened their German-style Amber Grain Bakery last year, and are well-known for their wildly popular stand at the Market. Denine has interviewed and photographed them producing bagels and bialys; burnished brioche and challahs; bee sting cakes and rugelachs; hearty German pretzels and thin crust pizzas and so much more. FEATURED ARTIST. Michele Cole Designs. Michele Cole is an artist who works with historic process photography and non-ferrous metals to create unique pieces of jewelry. Inspired by her love of the outdoors and the natural world, Michele’s subjects represent a mixture of the earth, the sky, the sea and the freedom to be. Her silver images are created on hand coated metal (aka tintypes), photographed through a vintage lens mounted on a vintage camera, processed in her darkroom, varnished (to protect the silver), then mounted into earrings and pendants.

Many of you know, but for those of you who don’t, I carry small bills for vendors who run out of singles during the Market day. For guest vendors who might not be aware, I also have a key to Perkins Art Center, a Market sponsor, the primary benefit of which, for our vendors is INDOOR PLUMBING!
VENDOR PARKING PERMITS
It’s good business to save the best parking spaces for SHOPPERS! Most visitors will tell you it’s tough to find parking at the Market. We make things worse by parking our own vehicles in spaces that could be used and re-used many times by shoppers. Please encourage your table crew to park for free in the Lumberyard Parking Garage (just across Collings Avenue from the west entrance). There are plenty of spaces inside, and the walk back to the Market takes 3 minutes.
Flexible Site Plan
Changes will continue to occur throughout the season as vendors come and go and as we learn more about how neighbors interact. I remind you no spaces are ever guaranteed and require your cooperation if I have to move your location any given week.

SHISHITO PEPPERS BEFORE AND AFTER “BLISTERING”
FLAIM FARMS. Kevin Flaim of Flaim Farms provided me a hatful of these trendy Shishito peppers and the preparation instructions: blister them in hot olive oil and sprinkle with salt; leave in a bowl on the counter and watch them disappear. Most of them are sweet, but one or two in every ten brings a bit of unexpected heat; hence their nickname: stealth peppers.

OUR SOULS SHINE. Cindy Irvin is not exactly new to the Market, but she’s making her return this week with an entirely new product. We tried a test version a couple weeks ago, and we’ve been eagerly waiting for another jar ever since. Cindy roasted peppers from Muth Family Organic and eggplant from Flaim Farms for this beautiful Jersey Fresh concoction she calls Pinjure. We just call it delicious. Her zucchini bread is made with Muth zucchini, and she’ll also have her famous books; perhaps even some fresh-squeezed lemonade.

Contest Photos and Results. We are truly blessed to have a salsa-and/or-pie judge who is also a photographer, food writer, and expert chronicler of our contest events. Denine Gorniak (the bicycle-chef) tasted all the salsas in our 3rd Annual Salsa Making Contest, took judicious notes, photographed the salsas and the contest winners, and posted the results of all that effort HERE. Our contestants made good use of Jersey Fresh produce in their award-winning entries, not just red and green tomatoes, but also jalapenos, blueberries, and early peaches. Sarah found beautiful beets at Formisano Farms table along with some scallions and zucchini, and, not knowing what to do with them, adapted a recipe for an appetizer she had previously enjoyed that enhanced beets with other flavors. She grilled the beets over indirect heat (instead of heating the oven and thereby the kitchen), added grapefruit sections and goat cheese, some pistachios, a bit of basil, and found religion. There are plenty of spaces inside, and the walk back to the Market takes 3 minutes.

Collingswood Food Business Area: The color coding identifies new Market areas. At “the top” of the plan—the west end, on the Collings Avenue side of the Market—we’ve created space for Collingswood food businesses. Amber Grain Bakery has joined Sara’s Produce, Villa Barone Restaurant, and the new Revelation Cafe (a combination effort between Revolution Roasters and The Constellation Collective).
THE MEAT MARKET: At the “other end” of the plan—the east end at Perkins Art Center—we’ve collected farms that raise livestock, including heritage beef and pork, yak and alpacas, chickens for their meat and eggs, and bison.

Tasty Temptations. Our anonymous Official Market Blogger shopped the Market on that cool gray SAT JUN 23, also known as Week 8. She bought chicken, bacon, and eggs from Naturesown Farm and bratwurst to use for jambalaya. Then some beautiful zucchini from Fruitwood, and green beans from Springdale for Mom’s Veggie Pot. Of course, she sampled several items from the Savoie Organic Farm, and a Buttermilk Cinnamon Muffin from Constellation Collective that never made it home. Susan Mauer Lynch (YellowRoomUpstairs). Susan put together a beautiful Market meal that features collard greens and spring onion she purchased from Muth Organic Farm. In her post, she shares the technique for getting collards to the table in 35 minutes (they don’t have to take all day!). Also featured on the plate are pork ribs from Hillacres Pride; sweet corn and tomatoes from AT Buzby; Muth’s yellow zucchini; and cole slaw made from Muth Organic Farm’s cabbage. Tasty Temptations. As promised elsewhere, our anonymous Market wanderer and advocate produced one of Mister Tasty’s favorite meals from bratwurst provided by Scott Rowe of Naturesown Farm. She followed a favorite recipe from @landolakesktchn cookbook, substituting the bratwurst for the store-bought kielbasa she usually uses. For photos, follow the link to TT’s facebook post. Come pick up your Official Market Leash this Saturday at the Dog Tent in the middle of the Market. It’s good for the whole season. In fact, it’s good for as long as we have an Official Market Leash program!
This week, the year-round sponsors of the Dog Tent, the good people of NJ Aid for Animals will be staffing the tent, explaining the Dog Behavior Guidelines, and handling the leashes.
NJ Aid for Animals was established in 2005 and has been saving animals particularly from Camden for thirteen years.
