Collingswood Foods SAT SEP 01
REVELATION CAFÉ! Local food heroes Revolution Roasters and the Constellation Collective have teamed up to form a new food-and-beverage café at the west end of the Market. Pull up a chair in their seating area and enjoy locally-roasted coffee and breakfast treats.
Amber Grain Bakery has closed its doors to give baker Stephen Kramer a chance to take a new job as a product development wizard. We’ll try to coax Dulce to the Market to ensure that we always have a BID bakery presence.
Villa Barone. Giovanni (John) Barone will stand in for his father Guido this week, selling sauces, perhaps cheeses, the very popular zeppoles, and other Italian favorites from this popular Collingswood restaurant.
Sara’s Produce, by special arrangement, is the one source for produce NOT grown in New Jersey. They are mandated to bring us the “exotics” so our shoppers won’t need to go to the supermarket for an avocado or a lemon.

Garlic Knot Chicken Nuggets
Stef Perna (treatbelly). Stef has been using a seasoned wet salt brine for a variety of kitchen and grilling techniques. This week, she applies the mixture to chicken nuggets to create what she calls Garlic Knot Nuggets. She gets her garlic from Savoie Organic Farm, and her parsley (or cilantro) from Flaim Farms. Prep is simple, presentation is elegant, and the quick saute technique keeps the chicken breast nuggets from drying out. These are anything but your drive-thru nuggets. Grilled Leg of Lamb
Susan Mauer Lynch (YellowRoomUpstairs). Grilled Leg of Lamb. It took Susan no time at all to find Roger Byrom’s lamb offerings from Headquarters Farm of Stockton NJ. A native of the Lake District of England, Roger has spent several seasons producing lambs that blend the best characteristics of the Romney, Romeldale, and Jacob breeds. The flock is raised and finished on grass they freely graze on neighboring solar farms where they “do the landscaping” for hire. Susan dry-rubbed and slow-grilled her small leg of lamb to save you the trouble of experimenting. See her blog post for instructions on how to replicate her efforts.

4 Paws New Jersey.
The wonderful people of 4 Paws will be staffing the Dog Tent for us this week, sharing stories of rescuing needy animals at extreme expense. They’ll distribute the essential Official Market leash to your 4-legged companions and introduce you to adoption possibilities. Personally, we’re hoping to meet Molly, a terrier/pitbull mix not yet 6 years old.

WEST STAGE UNDER PATCO. Mannix Duo. They’re Jimmy Mannix and Zuff. If you’ve heard them before, you know Jimmy has the rock hero voice that works on every song from your favorite repertoire. And Zuff just makes it all work. Don’t miss this act.

Sue Kinney Smart Dog Graphics
FEATURED ARTIST. Sue Kinney (Smart Dog Graphics). Sue does exquisitely detailed drawings of birds, and oil portraits of precious dog pets. The bird drawings become note cards for sending to only best friends. The portraits, of course, are devoted to man’s best friends. Smart Dog Graphics is a brand new Featured Artist, so we’re just as eager as everyone else to see this work up close. Stop by to meet Sue and see her fine-feathered-and-furred friends at the Featured Artist tent at space 24.

Many of you know, but for those of you who don’t, I carry small bills for vendors who run out of singles during the Market day. For guest vendors who might not be aware, I also have a key to Perkins Art Center, a Market sponsor, the primary benefit of which, for our vendors is INDOOR PLUMBING!
VENDOR PARKING PERMITS
It’s good business to save the best parking spaces for SHOPPERS! Most visitors will tell you it’s tough to find parking at the Market. We make things worse by parking our own vehicles in spaces that could be used and re-used many times by shoppers. Please encourage your table crew to park for free in the Lumberyard Parking Garage (just across Collings Avenue from the west entrance). There are plenty of spaces inside, and the walk back to the Market takes 3 minutes.

Changes will continue to occur throughout the season as vendors come and go and as we learn more about how neighbors interact. I remind you no spaces are ever guaranteed and require your cooperation if I have to move your location any given week.
